Bill Hjortsberg grew up in New York City where he learned to play drums. After moving to Atlanta in the 1970s, he did a short stint with the backup band for Percy Sledge. In the early 1980s, Bill joined the Ansel, Strong & Reeves band, a country/rock group that opened for The Allman Brothers Band, Hank Williams Jr., Graham Nash, and Doc & Merle Watson.

Since moving to New Orleans in 2008, he has played with several bands besides Major Bacon such as JD Hill & The Jammers, Butch Trivette & The Crescent City Twisters, Ready Teddy & The Swampdaddys and Mike Darby & The House of Cards. Bill joined Major Bacon in 2009 and has been frying up sizzling blues licks with Dave and Eloise ever since.
